Even when outside of Hiroshima, you'll sometimes see restaurants serving "Hiroshima-style okonomiyaki." Just what is the difference between Osaka-style and Hiroshima-style okonomiyaki? One of the biggest differences is in the way that the okonomiyaki is cooked.
If you have ever been to an okonomiyaki restaurant in Osaka, you might have experienced cooking Okonomiyaki on a hot plate and mixing all the ingredients before cooking. For 'Hiroshimayaki' (Hiroshima-style okonomiyaki), the ingredients aren't mixed! Instead, the ingredients are layered one at a time to form a mound of ingredients on the griddle.
The batter is also quite different and a thin layer of batter that looks like a crepe usually added on top of cabbage and noodles!

In terms of sauce, Osaka's Okonomiyaki is typically a bit spicy, whereas the sauce used in Hiroshima's Okonomiyaki is usually sweeter.
