Looking for great pizza around Roppongi? Good! Because there happens to be one of the top-rated pizzerias in all the metropolis located right there. It's called Savoy, and it makes some traditional Neapolitan style pizzas.

Baked in a wood fired oven

Walk into this small pizza joint of just 13 places and the first thing that will strike you is the huge wood-fired oven! Respecting tradition is part of the philosophy of the owners at Savoy, and seeing the chef's skilful preparation of each pizza, from the forming of the dough to the quick cooking of the pizza in the high-temperature wood oven is part of the fun experience of having a meal there.

¥1,000 for a lunch pizza!

The quality is undeniable, yet the price is very reasonable! It's only ¥1,000 for a pizza for lunch, and with that, you also get free peach tea. If you go for dinner, it will be ¥1,500 per pizza. The standards are Margherita (mozzarella and basil) and Marinara (garlic and oregano). Savoy advises against adding extra toppings because the balance of flavours is meant to be perfect as is.

Technique and quality ingredients

The dough is prepared 24 hours beforehand and slowly fermented in a controlled environment guaranteeing the perfect temperature and humidity.

Upon your order, the chef forms the balls of dough into their pizza forms right before you. This is a crucial part of pizza making because improper stretching of the dough at this point can ruin the texture.

After the toppings are added, the pizza is baked at 500 degrees in the wood oven. Thanks to the extremely high temperature, the sweetness and umami of the ingredients are preserved and the fragrance of the tomato sauce and olive oil is enhanced.
As for the ingredients used, everything is top quality. The mozzarella cheese is not matured at all; it's fresh, soft with a milky taste, and the tomato sauce is done exactly the same way as it is in Italy, so you'll notice that it's a bit more acidic than the average, yet perfectly balanced by the right amount of sweetness.

Outstanding pizza is Savoy's claim to fame, but you can also have some of their excellent appetizers from their antipasti menu, and a glass of nice Italian wine (¥750) is never a bad idea to pair with your meal!
